Giving Thanks: Banana Pudding

Today is Thanksgiving.

We complain about cleaning… in the home we once prayed God would bless us with. We get frustrated filling up the gas tank… in the car that gets us where we need to go. It doesn’t mean we can’t acknowledge our feelings—life is not always positive. But I’ve learned that perspective truly is everything.

Perspective helps us focus on what actually deserves our attention. When we fixate on the negative, we risk missing what really matters. Simple idea, tough execution. I get it.

Banana pudding has been a staple at gatherings for as long as I can remember. Ingredients

Custard (Pudding):

  • ⅔ cup granulated sugar (141 grams)

  • ⅓ cup flour (46 grams)

  • ¼ teaspoon salt

  • 3 large eggs

  • 2 cups milk

  • ½ teaspoon vanilla

  • 2 tablespoons butter, softened

  • 2 bananas, peeled and sliced

  • 12 ounce package vanilla wafers

Instructions

  1. Combine sugar, flour, and salt in a saucepan.

  2. Add the eggs and mix well.

  3. Stir in the milk and cook over low heat stirring constantly.

  4. Remove from heat when mixture thickens and continue to stir.

  5. Cool slightly.

  6. Add in the butter and vanilla. Layer pudding with the bananas and wafers. Keep refrigerated.
